Bruschetta Chicken Bake…

Brushchetta Chicken Bake (6 servings, 1 cup each)

from Kraft What’s Cooking Magazine Fall 2008

1 can (19 fl oz / 540 ml) diced tomatoes, undrained

1 pkg (120g) Stove Top Stuffing Mix for Chicken

2 cloves garlic, minced

1 1/2 lb boneless skinless, chicken breasts, cut into bite-size pieces

1 tsp dried basil leaves

1 cup Mozzarella Shredded Cheese

Heat oven to 400F. Mix tomatoes, stuffing mix and garlic just until stuffing mix is moistened.

Layer chicken, basil, cheese and stuffing in 13×9-inch or 3-L baking dish.

Bake 30 min. or until chicken is cooked through. Enjoy now or cover and refrigerate. To reheat, microwave each serving on HIGH 2 to 3 min.

This is a very tasty dish, we had it with salad.

    I found your blog on Leslie Miller’s site and I came here and loved this recipe you posted! I cannot wait to try it. By the way, my daughter is a hugh Twilight fan and she obbsessed w/it. She was going to the premiere in CA, but it got moved to Nov. and she could not go. Visit her blog sometimes.
