Bumbleberry Cobbler…

I baked again on Monday…yes, we all know what that means. **SIGH**

We served it with DQ Soft Serve ice cream. It is really, really yummy, but, I would use less than 1/2 cup of sugar in the berry mix.

Peanut Butter-Brownie Pie…

Peanut Butter-Brownie Pie (Serves 12)

from Kraft What’s Cooking Magazine Fall 2008

1 pkg (450g) brownie mix

1 1/2 cups cold milk

1 pkg (4-serving size) Jello-O Vanilla Instant Pudding

1/2 cup Smooth Peanut Butter, divided

1 cup thawed Cool Whip Whipped Topping

Heat oven to 350F. Prepare brownie batter as directed on package; pour into greased 9-inch pie plate. Bake 30 min. Cool completely. Scoop out centre, leaving 1/2-inch-thick rim around edge and thin layer of brownie on bottom. Reserve centre pieces.

Beat milk and pudding mix with whisk 2 min. Add 1/3 cup peanut butter; mix well. Stir in whipped topping. Spoon into crust; top with reserved brownie pieces.

Microwave remaining peanut butter in microwaveable bowl on HIGH 1 min.; stir. Drizzle over pie. Refrigerate 2 hours or until pie is set. Refrigerate leftovers.

NOTE: I used a Low-fat brownie mix, 1% milk, Fat-free pudding, light peanut butter & light cool whip.

TIP: I use a blender to mix the Fat-free pudding as I find with Fat-free pudding you tend to get “lumps” if only using a wire wisk.

This dessert is FABULOUS!

Bruschetta Chicken Bake…

Brushchetta Chicken Bake (6 servings, 1 cup each)

from Kraft What’s Cooking Magazine Fall 2008

1 can (19 fl oz / 540 ml) diced tomatoes, undrained

1 pkg (120g) Stove Top Stuffing Mix for Chicken

2 cloves garlic, minced

1 1/2 lb boneless skinless, chicken breasts, cut into bite-size pieces

1 tsp dried basil leaves

1 cup Mozzarella Shredded Cheese

Heat oven to 400F. Mix tomatoes, stuffing mix and garlic just until stuffing mix is moistened.

Layer chicken, basil, cheese and stuffing in 13×9-inch or 3-L baking dish.

Bake 30 min. or until chicken is cooked through. Enjoy now or cover and refrigerate. To reheat, microwave each serving on HIGH 2 to 3 min.

This is a very tasty dish, we had it with salad.

Chocolate Bran Muffins…

Chocolate Bran Muffins (Makes 24 Muffins at 1 Point each or make 8 mini loaves at 3 points each)

3 cups All Bran Cereal

2 1/2 cups warm water

1 package of Low Fat Brownie Mix

1 1/2 tsp baking powder

1. Soak the cereal and water together for a few minutes.

2. Add remaining ingredients & mix together.

3. Spray muffing tins with Pam. Bake at 350F for 20-25 minutes.

This is an old WW recipe, I cannot believe I haven’t shared it yet! It’s a great way to get some bran in your diet & at the same time it tastes yummy!

Fresh Homemade Wonton Soup…

Wonton Soup (not my recipe – from an old friend)

1 package of Wonton Wrappers

1 lb Lean Ground Pork

2 tsp brown sugar

2 tbsp rice wine or vinegar

2 tbsp soy sauce

2 tsp green onions

2 tsp ginger root

1/2 tsp Chinese 5 Spice

1 egg

1/2 tsp Sesame Oil

Bit-O-White-Pepper

1. Mix all ingredients & let sit for 25 minutes or overnight

2. To make Wontons fill with 1/2-1 tsp of filling per Wonton, put in middle of wrapper & fold over like a triangle using water on your finger as a “glue”

3. Bring 2 cans of Chicken Broth to a boil, add peas, wontons, green onions, ginger & sesame oil, adjust the chicken broth to how many wontons you put in, cook 5-10 minutes until the wonton is wrinkly & slimy!

I used just over 1 lb of lean ground pork & I stopped filling wontons about 1/2 way thru (very tedious & 1 hr later)! I than freezed remaining mixture in a Ziploc baggie for next time. I than cooked how many Wontons I needed & left the other Wontons on the cookie sheet & stuck them in the freezer on parchment paper, once they are frozen stick them in a Ziploc baggie & freeze & than you can pull them out & cook from frozen.

They may look grosse! but, they are yummy & much better for you than buying them already made.

Once you have the Wontons made ahead of time you can pull them out of the freezer for lunch or dinner in a zip!

New recipes…

Amongst my crazy week I managed to try 2 new recipes, 1 was for dinner & 1 was today…something yummy! I really love trying new recipes & I really love baking for my family.

The first one I tried was from www.kraftcanada.com (I use this website ALOT), it was Sweet & Sour SHAKE’N BAKE Balls, I used Teriyaki Glaze instead of Honey Garlic because I couldn’t find it, they were yummy, I served over steamed rice. The recipe can be found here.

The other one I made this afternoon is White Chip Chocolate Cookies & the recipe can be found here. They are another hit.

Blueberry Lemon Muffins…

I like to bake / cook especially when I have had a less than stellar day & today is one of those days.

So, I decided I would like to make some yummy blueberry muffins, we have fresh now frozen blueberries in the house from my in-laws, every Summer they head out to BC to pick up like 75 lbs of blueberries! they are sooooo yummy, we can only take so much home as we don’t have a lot of space for them, so I usually end up buying alot from the grocery store when they become available, the only problem is that my kid’s, especially my son can eat the whole 2lb container almost to himself!

Family Fun Night…

We started Family Fun Night on Wednesday, alot of people I’m sure do this but, we decided that once a week on Wednesday the kid’s can decide how they would like for us to spend our evening as a family, no computers, no TV, etc. So the kid’s wanted to have Pita Pizza’s for dinner & than we went to Chuck E Cheese’s.

We like to make Pita Pizza’s quite often, I use whole wheat pita’s, Canadian Back Bacon or Ham, Mozzarella with Parmesan Cheese, Light Feta, Peppers & Pineapple, I chop everything up & than we all get to make our own pizza’s. We make 8 each time so that we have lot’s of leftovers the next day, my daughter loves to take them for lunch.

Next week we will be staying in for Family Fun Night.
